    I have made this on several occasions and it is yummy. Also a one pot kind of meal, and preparation and cooking time is short, so a plus all round :cool4:

    Thanks, Dawn. Do like kedgeree & we used to have it, often, once a week. The recipe I used was different to Delia's in that smoked haddock, onions or curry powder weren't used. Instead it was smoked cod & sour cream combined with the rice & boiled eggs.

    What I liked about this dish, was that all the ingredients could be prepared in advance & put together, very quickly, just before serving. This made it a great light dinner we could have on a Friday evening before going off to the yacht club for the night. :whistle: :cool4:

    :D thank you for letting me in on it! I am glad he enjoyed it it was sooooo hot in the kitchen while I was cooking it! I am surprised it even got finished in the end. :) It is so unusual for the humidity to be so high here! :hot!:

    It does seem as though your heroic culinary endeavours, in the face of such yucky heat & humidity, was well & truly worth it, Dawn, & they sure were appreciated, muchly. :bravo: :cool4:
